Low Cholesterol Stuffed Mushrooms

12 very large mushrooms
1 small onion, chopped fine

Garnish:
Chopped parsley
lettuce



Take large mushrooms, remove stems and chop stems with equal amount of chopped onions. Cook the onion and stem mushroom mixture in a tiny amount of water for 3 - 4 minutes. Add to mushroom cavity. Cover and let mushrooms simmer in 1 teaspoon of water ( mushrooms leach water, too) over low heat for 15 minutes or cook, covered in microwave for 8 minutes. Top with chopped parsley before serving. Serve hot or cold. If cold, serve on lettuce with vinaigrette dressing. Serves 4
