Stuffed Mushrooms 3

1 pound of mushrooms
1/2 cup of breadcrumbs
1/2 of a onion
1 clove garlic
1/2 pound of spinach
1/2 teaspoon of thyme
salt and pepper
3 tablespoons of butter 


Instructions:

Remove mushroom stems and chop. Chop onion and garlic and sauté in the butter. Add the chopped spinach and mushroom stems and cook for about 5 minutes. Add this mixture to the breadcrumbs along with thyme, salt and pepper and mix well. Stuff each mushroom cap with this, place them on a buttered baking dish and bake at 375ºF.   for 15 minutes.

Bonus Notes: You can use cooked rice instead of breadcrumbs, add more seasonings or additional vegetables. This is a very simple dish that tastes simply wonderful, so don't be afraid to experiment. You can even use this same idea for stuffed cherry tomatoes. Just scoop out their centers with a spoon, salt the inside lightly and stuff. Sprinkle a little parmesan cheese on top and bake.
