Stuffed Pepper Pie 

Stuffed Pepper Pie

Categories: Bell pepper, Casseroles, Stuffed

3 Green bell peppers; halved
1/4 cup of chopped onion
1 cup of water
2 tablespoons of butter
1 1/3 cup of  Instant potato flakes
1/4 cup of milk
1 Egg; beaten
1 pound of sausage, cooked
1 cup of Mozzarella, shredded



Boil peppers 15 minutes. Drain; arrange cut side up in a pie pan. Combine onion, water and butter and bring to a boil. Stir in potato flakes, milk and egg. Stir in sausage. Spoon into pie pan over peppers. Sprinkle with cheese. Bake at 350ºF.   15-20 minutes. From a collection of my mothers (Judy Hosey) recipe box which contained lots of her favorite recipes, clippings, etc. Serving Size: 6
