| | Stuffed Onion Peppers
4 green peppers 1 onion 1 clove garlic 1 cup of breadcrumbs 1/2 pound of mushrooms 1 egg 3 tablespoons of butter a dash of nutmeg 1 tablespoon of basil 1 package of frozen spinach salt and pepper
Boil the peppers in water for 5 minutes. Drain, remove the tops and scoop out the seeds. Cook the spinach in boiling water for 5 minutes, drain well and chop fine. Chop the onion and garlic and sauté in butter until soft. Add the sliced mushrooms and cook for 3 minutes. Mix the spinach, onion and mushrooms with the breadcrumbs and seasonings and add the beaten egg. If the mixture seems too dry, add a little liquid like water, tomato juice or stock. Season well and fill the peppers with stuffing. Place in a buttered baking dish and bake in an oven preheated to 350ºF. for 30 minutes.
