8 small tomatoes 1 cup of cooked shrimp 1 small onion or scallion finely chopped 2 tablespoons of mayonnaise 1 tablespoon of tomato catsup 1/4 teaspoon of salt freshly ground black pepper A dash of Worcestershire sauce 8 sprigs of parsley
Cut off the tops of the tomatoes and spoon out the pulp. Place upside down on paper towels to drain. Mix shrimp with the onion, mayonnaise and catsup. Season with salt, pepper and Worcestershire sauce. Stuff tomatoes with this mixture and decorate with a sprig of parsley. 4 servings |
