Spinach Stuffed Shells

1 package of large macaroni shells
1 small Onion, chopped
10 ounces of frozen chopped Spinach
1 tablespoon of Instant Chicken bullion
1/2 teaspoon  of garlic powder
1/8 teaspoon of dried thyme
1 1/2 cup of low-fat ricotta cheese
1 cup of low-fat cottage cheese
2 Eggs
48 ounce jar of spaghetti sauce
8 ounces of shredded mozzarella cheese 

Preheat oven to 350ºF.   Cook spinach as directed on package; drain well. Cook shells as directed; drain, cool. In a large bowl, mix chopped onion, chicken bullion, garlic powder, thyme, ricotta cheese, cottage cheese, eggs, and cooked spinach. Using your hands and a large spoon, stuff shells with the mixture, and lay in rows in a 13" x 9" baking pan. Spread spaghetti sauce over the shells in the pan. Sprinkle shredded mozzarella on top. Bake at 350ºF.  for 25 - 35 minutes, until warm in the center, and mozzarella cheese has melted. From Geminis MASSIVE MealMaster collection at www.synapse.com/~gemini
