Spinach Ricotta Stuffed Potato (5 Pts)

10 ounces potato, split and fluffed, baked 1/4 cup of frozen chopped spinach, thawed and squeezed 1/4 cup of ricotta cheese, part skim milk 1 pinch of garlic powder 1 pinch of hot red pepper flakes, optional |
Instructions: In small bowl, combine potato flesh, spinach, ricotta, garlic powder and red pepper flakes, if using; stuff back into potato skin. Bake as directed in basic baked potatoes.
