Stuffed Acorn Squash

3 acorn squash
1/2 pound of lean ground beef
1/2 pound of fresh ground pork
1 cup of stuffing
1 cup of consommé
melted butter or margarine

Preheat oven to 350ºF. Combine the ground beef, ground pork, stuffing and consommé, and mix well. Cut the squash in half and discard the seeds. Parboil the squash, cut side down, in a little boiling water for about 5 minutes and brush it generously with melted butter or margarine. Divide the stuffing mixture among the squash shells and bake at 350ºF. for about 1 hour or until the squash is tender. Serves 6
