| Stuffed Zucchini 6
3 zucchini 2 tablespoons of minced onion 3 tablespoons of butter 1 cup of melted butter 1 cup of soft whole wheat or white bread crumbs 1/2 cup of cooked tomatoes |

Cook whole zucchini in boiling water for 5 minutes. Cut in halves and scoop out centers. Mix pulp with remaining ingredients. Fill zucchini and bake in oven at 350ºF. for 10 minutes. |
