1 pound of ground beef or beef and lamb mixed 1 small onion, peeled and cut fine 1/4 cup of quick cooking rice 1/4 cup of milk 2 teaspoons of salt 1/2 teaspoon of pepper 1/2 teaspoon of thyme 8 small zucchini two 8 ounce cans of tomato sauce
Preheat oven to 350ºF.Combine meat, onion, rice, milk and seasonings. Wash and scrub squash. Cut ends off. Use apple corer to hollow out squash. Fill each squash loosely with meat stuffing. Heat tomato sauce in flameproof shallow baking dish. Stir scooped out squash centers into sauce as well as any leftover meat mixture. Mix and bring to a boil. Lay stuffed zucchini in sauce. Bake, covered about 1 hour or until squash is tender. Uncover for last 10 minutes of time. Stir sauce occasionally. Makes 4 - 8 servings.
Grated Parmesan cheese makes a good addition to this Italian favorite. Also a small amount of herb, such as thyme, basil, or oregano, stirred into the sauce during the last half hour of baking adds interest.
