Mashed Potato Marvel

2 medium potatoes
one 3 ounce package of cream cheese, softened
3 tablespoons of light cream
1/2 teaspoon of salt
a dash of pepper
a dash of fine herbs
1 tablespoon of butter or margarine



Cook the potatoes in boiling salted water until tender, drain. Beat the cream cheese until fluffy. Add hot potatoes gradually, beating constantly until light and fluffy. Beat in cream. Season with salt, pepper and fine herbs. Pile in two mounds on greased heavy duty aluminum foil. Dot with butter or margarine. Broil for 5 minutes. Makes 2 servings
