| Zucchini Parmesan Cut 1 medium zucchini into strips, 2 x 1/2 inch Heat 1 inch of salted water (1/2 teaspoon salt to 1 cup of water) to boiling. Add zucchini. Cover and heat to boiling, cook until tender, 7 - 9 minutes. Drain. Add 1 tablespoon of butter or margarine and toss. Sprinkle 1 tablespoon of Parmesan cheese on zucchini. Makes 2 servings. |
