Cook the manicotti shells in boiling salted water for 10 minutes; drain. Rinse in cold water drain and set aside. Sauté the ground chuck, onion and green pepper until brown, drain. Add tomato sauce, oregano, thyme, and bay leaf; simmer over low heat for 10 minutes. Add 1/2 cup of cheese, stirring until melted. Arrange manicotti shells in tow individual baking dishes, stuff with half of the meat mixture. Pour the remaining meat mixture over shells; sprinkle with remaining cheese. Bake at 300ºF. for 30 minutes. Makes 2 servings |
