| | Avocado Endive Salad
3 tablespoons of vegetable oil 1 tablespoon of fresh lemon juice 1 tablespoon of red wine vinegar 1 tablespoon of Dijon mustard 1/2 teaspoon of salt 1/4 teaspoon of pepper 4 heads of Belgian endive 1 avocado, peeled and sliced
Combine the first 6 ingredients in a jar. Cover tightly; shake vigorously. Rinse endive; pat dry and trim ends. Arrange endive and avocado on individual salad plates; drizzle with dressing. Serve immediately. Yield: 4 servings. |
