Chicken Stuffed Apples

2 cups of diced cooked white chicken meat
1/2 cup of canned pineapple chunks, drained
1 cup of seedless grapes, peeled
2 stalks celery, chopped
1 1/4 cups of mayonnaise
4 large apples
1 teaspoon of grated lemon rind
2 tablespoons of slivered almonds, lightly browned in butter



Mix chicken with pineapple chunks, grapes and celery. Toss with mayonnaise.
Polish apples and cut in half. Scoop out fruit with grapefruit knife or spoon. Remove core and dice scooped out apple. Add diced apples to mayonnaise mixture.
Fill apple halves with chicken mayonnaise. Sprinkle top with grated lemon rind and almonds. Serves 4
