Chicken Salad
4 cups of large chunks cooked chicken, white meat 1 cup of drained pineapple chunks 3/4 cup of raisins 1 cup of mayonnaise 1/4 cup of plain low fat yogurt 1/2 cup of chopped walnuts
In a large bowl, mix chicken, pineapple and raisins. In a small bowl, mix mayonnaise and yogurt. Combine the two mixtures and sprinkle walnuts on top. Chill thoroughly before serving. Could be served in half of pineapple shell, cut lengthwise for an attractive display. Serves 8 - 10
