| Hot Chicken or Seafood Salad
2 cups of cut up chicken (or crab or shrimp) 2 cups of thinly sliced celery 1/2 cup of cashews or 1 can of sliced water chestnuts, drained 1/2 teaspoon of salt 1 onion, grated 1 cup of mayonnaise, not salad dressing 2 tablespoons of lemon juice 1/2 cup of shredded sharp cheese 1 cup of potato chips |

Combine all ingredients, except cheese and potato chips. Pile lightly in casserole dish. Sprinkle with cheese and potato chips. Bake in preheated 400ºF. oven until mixture is hot and cheese melted, approximately 20 minutes. |
