Salad Recipes

 

Omega's Coleslaw

1 small firm cabbage, about 2 pounds
2 large carrots
1/4 cup of sweet pickle juice
1/4 cup of sugar
1/2 teaspoon of celery seeds
Mayonnaise, to hold together
1/4 cup of sweet pickles, chopped 




Grate cabbage and carrots in a bowl. Toss with pickle juice, sugar and celery seeds. add chopped pickles and gradually add mayonnaise (just enough to hold mixture together). Sometimes Omega uses vinegar instead of pickle juice and then adds more chopped pickles. This recipe was hard to make specific because she just has a feel for when it's right.
