Peachy Blue Cheese Salad
one 1 pound can of cling peach slices 1 pkg. of peach gelatin one 5 ounce jar of blue cheese spread 1/2 cup of salad dressing 1/4 cup of chopped celery 2 or 3 tablespoons of ripe olive wedges Salad greens
Drain the syrup from peaches and add enough water, if needed, to make 1 cup liquid. Pour into a saucepan and bring to a boil. Add the gelatin and stir until dissolved. Blend in the cheese spread and salad dressing and chill until partially set. Mix in the celery, olives and peaches, reserving several peach slices for garnish. Pour into a 1 quart mold and chill until firm. Unmold and garnish with peach slices and crisp salad greens. 6 servings
