Poppy Seed Zucchini Salad
2 1/2 tablespoons of red wine vinegar 2 tablespoons of orange juice 1 tablespoon of poppy seeds 1 teaspoon of sugar 1/2 teaspoon of dry mustard 1/4 teaspoon of salt 1/2 cup of vegetable oil 1 onion 8 large zucchini, cut in half lengthwise & shred thinly
Whisk first 6 ingredients in bowl. Gradually whisk in oil. Mix in onion. Cover and refrigerate. Can be done 1 day ahead. Place zucchini in large bowl and add dressing and toss. |
