Party Shrimp Salad

 

Party Shrimp Salad

Categories: Salads, gelatin, Shrimp

1 envelope of gelatin
1/4 cup of cold water
1/2 cup of tomato juice
one 8 ounce package of cream cheese
1/2 cup of mayonnaise
1 1/2 tablespoon of lemon juice
11/2 teaspoon of salt
1 cup of canned or cooked shrimp
1/2 cup of diced celery



Instructions:

Soften the gelatin in the cold water. Dissolve over hot water. Add the tomato  juice. Gradually add to the cream cheese, blending until smooth. Chill until slightly thickened. Combine the mayonnaise, lemon juice, salt and celery and add to the gelatin mixture. Fold in shrimp. Pour into a 1 quart mold. Chill until firm. Unmold on a platter, surround with crisp lettuce and garnish with whole shrimp. Serves 4 -6  Mrs. F.X. Lauterbur
