Lomi Lomi Salmon

1 pound of salt salmon*
5 ripe tomatoes
1 large onion
Ice cubes

Soak the salmon in water for 4 to 5 hours. Remove the skin and bones and break or cut into pieces. Peel the tomatoes and onion and chop. Squeeze all of the ingredients through your fingers until they are in small pieces and well mixed. Add several ice cubes and chill thoroughly. Makes 4 to 6 servings. *If salt salmon is not available, fresh salmon may be used if soaked overnight in a strong brine, instead of soaking in water.
