| | Hot German Potato Salad 9 medium size round red potatoes, scrubbed, about 4 1/2 pounds 6 slices of bacon 1 medium onion, chopped 2 tablespoons of all purpose flour 2 tablespoons of sugar 2 to 3 teaspoons of salt 1/8 teaspoon of pepper 1/2 teaspoon of celery seeds 3/4 cup of water 1/3 cup of apple cider vinegar |

Cook potatoes in boiling water to cover 25 to 30 minutes or until tender. Drain and cool for 10 minutes. Cut the potatoes into 1/2 inch thick slices, set aside. Cook the bacon in a large skillet until crisp and remove the bacon, reserving drippings in skillet. Crumble bacon and set aside. Cook the onion in reserved drippings, stirring constantly until tender. Add flour and the next 4 ingredients, stirring until blended. Cook for 1 minute over medium heat, stirring constantly. Gradually stir in 3/4 cup of water and vinegar, cook until the sauce is thickened and bubbly. Layer one third each of potato and bacon in a 2 1/2 quart serving bowl, drizzle with one third of sauce mixture. Repeat procedure twice, serve immediately. Makes 8 servings Tried & Tested - 7/5/07 - I made this yesterday on the fourth, Everyone raved about how good it was. My best friend even asked if I would give her "my recipe" for her Labor day cookout! I added an extra tablespoon of flour and a extra dash of sugar. I made it ahead of time, and placed it in the oven one hour (225ºF.)before we sat down to eat. I also made the Baked beans, they were great! TB Newport News, VA Excellent!
