| Cucumber Cumin Salad Submitted by Wesley 1 teaspoon of cumin seeds 1/2 cup of low fat cottage cheese 1/2 cup of plain low fat yogurt 1/4 teaspoon of salt 1 medium cucumber, chopped 1 small onion, finely chopped 1 tomato, chopped 1 tablespoon of chopped parsley Toast the cumin seeds in a dry frying pan and brittle. Blend the cottage cheese and yogurt in blender, add cumin seeds and salt. Combine the vegetables in bowl, pour dressing over and toss. Refrigerate about 1/2 hour before serving. Serves 4 |
