German Potato Salad

1/4 cup of sugar
1 tablespoon of flour
2 teaspoon of salt
1/4 teaspoon of pepper
1/4 cup of vinegar
2/3 cup of water
4 slices of bacon, diced and browned
1/4 cup of bacon drippings
4 cups of cold, cooked, cubed potatoes
1 hard boiled egg
2 tablespoons of chopped onion
Sprig parsley

Combine the sugar, flour, salt and pepper in the top of a double broiler. Stir in the vinegar, water, bacon and bacon drippings. Cook, stirring constantly, about 5 minutes or until thick. Place potatoes, onions, egg and parsley in a greased casserole or baking pan. Pour dressing over and mix to coat all. Heat in a 350ºF. oven for 30 minutes. Serves 6 to 8

Recipe Tried & Tested: 10/11/02 Reviewed by Terry B. I used thick sliced bacon, and Mrs. Dash instead of salt and pepper. It was delicious!
