Salad Recipes

 

Tasty Macaroni Salad

3 cups of macaroni
12 ounce can of corned beef
2 medium cucumbers, diced
2 medium tomatoes, diced
1 medium carrot, diced
1 cup plus 4 tablespoons of mayonnaise
salt to taste
celery seed and boiled egg to garnish




Cook the macaroni, drain. Rinse with hot water. Turn macaroni  into mixing bowl. While macaroni is still hot, add corned beef, which has been broken apart and shredded, mix together until corned beef has been thoroughly worked through macaroni. Macaroni must be hot or corned beef will not mix through properly. Set aside to cool. Add cucumbers, tomatoes and onion. Add mayonnaise, mix all ingredients together thoroughly. Add salt to taste. Garnish with celery seed and sliced boiled egg.
