| Marinated Vegetable Salad 1/2 pound of green beans 1/2 pound of yellow wax beans 1/2 pound of fresh mushrooms 1 large Bermuda onion 1 small cauliflower 1 green peppers, sliced 2 medium carrots 4 stalks celery 3/4 cup of black olives water chestnuts, optional 1 small pimento 1/2 cup of red wine 1/2 cup of oil |

Wash the vegetables thoroughly. Blanch the bens, mushrooms, cauliflower quickly. Combine all of the vegetables with 1/2 cup of red wine and 1/2 cup of oil, salt, pepper, and salad herbs. Marinate for several hours. Makes a delicious summer salad.
