Zucchini Salad 5
6 small zucchini (about 1 1/4 lb., thinly sliced) 1/2 cup of green pepper 1/2 cup of diced celery 1/2 cup of diced onion one 2 ounce jar of jar diced pimiento, drained 2/3 cup of vinegar 1/3 cup of vegetable oil 1/2 cup of sugar 3 tablespoons of white wine vinegar 1/2 teaspoon of salt 1/2 teaspoon of pepper |

Combine zucchini, green pepper, celery, onion and pimiento in a medium bowl. Set aside. Combine remaining ingredients in a jar. Cover tightly and shake until well mixed. Pour marinade over vegetables; toss gently. Cover and chill 8 hours or overnight. Serves 8.
