Zucchini Salad 4 small zucchini, thinly sliced 4 tomatoes, cut in wedges 1 small green pepper, cut in strips 1/4 cup of chopped green onion 1/4 cup of snipped parsley 3/4 cup of salad oil 1/4 cup of vinegar 1 small clove garlic, minced 1/2 teaspoon of salt Lettuce |

In a bowl combine the zucchini, tomatoes, green pepper, onion, and parsley. Stir together the oil, vinegar, garlic, salt, and dash of pepper. Pour mixture over vegetables. Chill several hours. Drain off marinade. Serve salad in lettuce lined bowl. Sprinkle with additional salt and freshly ground pepper. Serves 8 to 10
