Frosted Cream of Tomato Soup
4 cups of tomato juice 1 cup of light cream 1 tablespoon of grated peeled onion 1/4 teaspoon of Tabasco sauce 1/2 teaspoon of salt 1/2 cup of sour cream 3 tablespoons of finely cut parsley
Combine the tomato juice, cream, onion, Tabasco and salt in mixing bowl. Chill 2 hours or longer. Serve in chilled bowls or cups. Add spoonful of sour cream to top of each serving. Sprinkle with parsley. Makes 4 or more servings.
Vary the flavor to suit your taste. A small amount of curry powder or a little celery seed, or a few grains of basil, oregano or thyme, add freshness to this cold soup. |
