Haricot Bean Soup

1 1/2 cups of haricot beans
5 cups (1 1/4 liters) water
2 medium onions, chopped
2 medium carrots, chopped
1 stalk celery, chopped
4 tablespoons of oil
2 cloves garlic, minced
1 bay leaf
1 ham bone
1 1/2 teaspoons of salt
1/4 teaspoon of black pepper
 Chopped parsley



Soak the beans in the water overnight. Transfer to a saucepan and simmer in the same water for about 1 1/2 hours. Put the beans and the water in the crock pot.
Sauté the onions, carrots, and celery in the oil until the onions are transparent. Put in the crock pot.
Add the garlic, bay leaf, ham bone, salt, pepper and two more cups of water. Cover and cook on low setting for 6 - 8 hours.
serve sprinkled with parsley.
Serves 6 - 8
