Garbure (French Cabbage & Beans)

1 cup of dried great Northern white or navy beans, soaked
1 pound of new potatoes, peeled and cut into 3/4 inch cubes
two 14 1/2 ounce cans of no salt added stewed tomatoes
6 cloves garlic, cut into thin slivers
3 cups of shredded cabbage
1/2 teaspoon of rosemary
salt and pepper to taste

Place beans, potatoes, 3 cups of water, garlic, cabbage and rosemary in a medium large pot. Bring liquid to a boil, cover and simmer gently for 1 1/2 hours or until the beans are tender. Make sure the level of the liquid remains constant during the entire time the soup is simmering, replenish evaporated liquid with water. Season to taste with salt and pepper. Makes 6 servings
