| Salmon Burgers
1/2 cup of chopped onion 3/4 cup of butter or fat, melted 1 pound of can salmon, flaked 2 eggs, beaten 1/3 cup of dry bread crumbs 1/4 cup of chopped parsley 1 teaspoon of dry mustard 1/2 teaspoon of salt 1/2 cup of dry bread crumbs |

Cook onion in butter until tender. add all remaining ingredients except 1/2 cup crumbs, mix well. Shape into 6 cakes, roll in crumbs. Fry cakes in hot oil. Fry at moderate heat until brown on both sides. Serve on buns with lemon wedges. 6 servings
