Vegetable Cheese Chowder
2 cups of water one 10 3/4 ounce can of chicken broth, undiluted 1 cup of sliced carrots 1/2 cup of chopped onion 1 small clove garlic, minced 1/8 teaspoon of pepper 2 cups of coarsely chopped fresh broccoli 2 tablespoons of all purpose flour 1 1/2 cups of milk 1 1/2 cups ( 6 ounces) of shredded Swiss cheese
Combine the first 6 ingredients in a large saucepan. bring to a boil. Reduce heat; cover and simmer 10 minutes. Add broccoli; cook 1 minute. Combine flour and milk, stirring well. Add milk mixture to vegetable mixture. Cook over medium heat 10 minutes or until thickened and bubbly. Stir in cheese. Serve immediately. Yield 6 cups |
