Greek Dressing for Thanksgiving

Greek Dressing for Thanksgiving

1 pound of  chicken giblets
2 pounds of  hamburger or sausage
1/2 pound of  butter or margarine
Salt and pepper to taste
3 onions, chopped fine
2 cups of diced celery
2 large apples, diced
1/2 cup of parsley, chopped fine
1 teaspoon of cinnamon
2 teaspoons of  ground cumin
2 cups of  raisins
Pine nuts
1 pound of  cleaned chestnuts
Cashew nuts, if desired
2 quarts of  chicken broth
1 1/2 cup of rice

Sauté giblets with butter, meat and chopped onions, celery, apple, parsley, salt and pepper, cinnamon and cumin. Let cook a while. Add chicken broth. Add raisins, pine nuts, chestnuts and cashews. Add 1 1/2 cups rice (or according how much you wish to make). Cook until rice is done. You may need to add more broth or water as it cooks, taking care not to scorch. Serve with chicken or turkey
