Holiday Cranberry Salad

3 envelopes of Knox gelatin softened in 3/4 c. water
1 cup of boiling orange juice
1 quart of cranberries, crushed (approx. 1 1/2 bags)
2 apples, crushed
2 cups of nuts, crushed
2 large stalks celery
1 1/2 to 2 mashed bananas
2 oranges sliced and cubed (no peel)



Soften the Knox in 3/4 cup cold water only takes a minute (60 seconds). Dissolve it in boiling orange juice. Stir in sugar. Cool slightly. Add fruit, nuts and vegetables. This recipe makes a lot. Can be frozen up to 4 months. I make this and give away on Thanksgiving and Christmas. Just put in container and chill until set.
