1/4 cup of butter 2/3 -1 cup of honey 2 eggs 1 cup of orange juice 2 cups of whole wheat flour 1/4 cup of milk powder or 1/3 cup of instant 1 teaspoon of baking powder 1 teaspoon of baking soda 1/2 teaspoon of salt 1 cup of chopped nuts 2 cups of fresh whole cranberries
Cream the butter and honey; beat in the eggs and orange juice. In a separate bowl, stir together all of the dry ingredients (except berries); add gradually to the liquid mixture. Fold in the cranberries. Turn the batter into an oiled and floured loaf pan. Bake at 325ºF. for 1 to 1 1/4 hours. Cool.
