CRANBERRY ORANGE HOLIDAY BREAD

4 cups of all purpose flour
2 cups of sugar
3 teaspoons of  baking powder
1 teaspoon of salt
1 teaspoon of baking soda
4 tablespoons of shortening
2 tablespoons of grated orange peel
1 3/4 cup of orange juice
2 eggs, well beaten
2 to 2 1/2 cups of  chopped cranberries
1/2 to 1 cup of chopped nuts (optional)

Preheat oven to 350ºF.   In bowl, mix together flour, sugar, baking powder, baking soda and salt. Stir in eggs, orange juice, orange peel, shortening. Mix until well blended. Stir in cranberries and nuts. Turn into aluminum mini loaf pans (8 to 9) 1/2 full (grease bottom of pans only). Bake 35 to 40 minutes. Test with toothpick. Cool 15 minutes.

Wrap in foil or cute saran wrap, tie with ribbon or bows, and wish someone a Happy Thanksgiving or Merry Christmas!
