Roast Turkey w/Dressing

one 8 - 10 pound turkey
salt
1 1/2 cp of chopped celery
1/3 cup of chopped onion
4 cups of crumbled toast or biscuit
3 cups of crumbled corn bread
1 1/2 cups of chopped hard cooked eggs
1/4 teaspoon of pepper
1/3 cup of margarine



Preheat oven to 325ºF. Brush the turkey with fat and season inside and out with salt. Place breast side up in a baking pan and add about 1 inch water to pan. Cover pan with foil. Bake for 4 hours to 4 hours and 30 minutes. Drain and reserve broth. Place the celery and onion in a saucepan and cover with boiling water. Simmer until tender and do not drain. Combine breads in a large bowl. Add the celery mixture, eggs, pepper, 1 1/2 tablespoons salt and enough turkey broth to moisten and mix well. Stir in the margarine and place in a greased pan. Bake at 350ºF. for about 25 minutes and serve with giblet gravy, if desired.
