English Peas

English Peas

2 pounds of fresh English peas (2 cups shelled) or 2 packages of frozen green peas
2 tablespoons of butter or margarine
2 cups of shredded Iceberg lettuce
1/4 cup of chopped onion
1/2 teaspoon of salt
1/4 teaspoon of pepper
1 teaspoon of minced basil




Shell  and wash peas, cover with water in a saucepan. Bring to a boil, cover, reduce heat, and simmer for 8 - 12 minutes or until tender. Drain and set aside. If using frozen peas, follow directions on package, drain and set aside. Melt butter in a large pan, add peas, lettuce, onion, salt, pepper and basil. Toss lightly, cover and cook 3 minutes. Serve immediately.
