Artichoke Crostini

1 jar ( 6 ounces ) of marinated artichoke hearts, drained and chopped
3 green onions, chopped
2 tablespoons of minced red bell pepper
5 tablespoons of grated Parmesan cheese, divided
2 tablespoons of mayonnaise
12 slices of French bread (1/2 inch thick)



Preheat broiler. Combine artichokes, green onions, red bell pepper, 3 tablespoons of cheese and mayonnaise in small bowl, mix well.
Arrange bread slices on baking sheet. Broil 4 to 5 inches from heat source 2 to 3 minutes on each side or until lightly browned.
Remove baking sheet from broiler. Spoon about 1 tablespoon of artichoke mixture on each bread slice and sprinkle with remaining 2 tablespoons of cheese. Broil 1 to 2 minutes or until cheese is melted and lightly browned. Makes 4 servings
