Artichoke & Shrimp Salad: on individual plates arrange beds of finely shredded lettuce. Heap whole shrimp on lettuce and sprinkle with finely diced celery. Add mayonnaise to moisten if desired. Season with a few drops of fresh lemon juice and salt and pepper to taste. Press hard cooked egg yolk through a sieve, sprinkle on shrimp. Surround with artichoke hearts. Garnish with pimiento. CHill. Two medium artichokes hearts make 1 serving for luncheon main dish.|
