| Baked Asparagus One 10 ounce package of frozen cut asparagus 1 to 2 tablespoons of butter or margarine Place the cut asparagus in a 1 quart casserole. Top with butter or margarine. Season with salt and pepper. Cover tightly. Bake at 375ºF. for 45 minutes, stirring occasionally after 20 minutes. Stir again just before serving. Serves 4 |

Baked Asparagus 2
1 pound of fresh asparagus 1/4 teaspoon of salt 2 tablespoons of butter Olive oil to grease pan
Wash asparagus thoroughly under running water to remove insects. Remove tough ends. Arrange in shallow oiled baking dish; dot with butter; season. Cover and bake in 350ºF. oven for 45 minutes. Serves 4-6.
Baked Asparagus w/Cheese 3
1 bunch asparagus, cooked Butter Lemon juice Finely grated cheese - Gruyere, Swiss, Parmesan
In a buttered casserole arrange a layer of asparagus spears, dot with butter and sprinkle with lemon juice. Sprinkle generously with cheese. Repeat twice more, so as to have three layers of asparagus ending with cheese. Dot with butter. (A few bread crumbs may be used to make more topping.) Bake in hot oven, 400ºF., about 10 to 12 minutes, so all is well heated and top is somewhat crusty. Serves 6.
Hungarian Baked Asparagus 4
24 steam cooked asparagus stalks, drained 1 cup of bread crumbs 2 tablespoons of margarine 1/3 cup of yogurt
Preheat oven to 350ºF. Slice tender section of asparagus stalks into 2 inch segments. Arrange asparagus pieces on bottom of baking dish.* Spread bread crumbs over asparagus. Melt margarine and sprinkle over bread crumbs; then cover with yogurt. Bake until crumbs turn light brown. *If baking dish is not large enough for asparagus to be placed in single layer, divide pieces and make a second layer on top of first, reserving half the bread crumbs, margarine and yogurt to top second layer. Baking time will increase slightly for double layer.
Baked Asparagus 5
1 package of potato chips, crumbled 1 can of green asparagus 1/2 pound of grated cheese 4 hard cooked eggs, sliced 1 1/2 cup of medium white sauce or 1 can mushroom soup
Arrange in greased casserole dish layers of potato chips, asparagus, grated cheese and egg slices. Repeat. Pour white sauce over this. Bake at 350ºF. for 30 minutes. Yield: 6 servings.
Italian Baked Asparagus 6
2 tablespoons of margarine or butter One 15 ounce can of extra long asparagus, drained 2 tablespoons of finely chopped onion 2 tablespoons of finely chopped celery 1 medium tomato, sliced 1/8 teaspoons of oregano leaves 1/8 teaspoon of thyme leaves A dash of pepper 1 tablespoon of grated Parmesan cheese
Heat oven to 350ºF. While oven is heating, melt margarine in 10x6 inch (1 1/2 quart) baking dish in oven. Remove dish from oven. Place asparagus spears in bottom of dish. Sprinkle with onion and celery. Arrange tomato slices on top. Sprinkle with oregano and thyme leaves, pepper and cheese. Bake at 350ºF. for 15 to 20 minutes or until heated through. Makes 4 servings.
Baked Asparagus Casserole 7
1 cup of all green asparagus (drained) 1/4 pound of cheese, grated (American or Cheddar) 3 boiled eggs (sliced) 1 cup of mushroom soup 10 crackers (rolled fine)
Place asparagus in buttered baking dish. Put layer of eggs, layer of cheese and layer of soup over asparagus. Sprinkle cracker crumbs on top. Melt butter and pour over or dot with butter tabs. Bake at 350ºF. about 20 minutes. |
