1 pint of cherry tomatoes 1/4 cup of low sodium herbed bread crumbs 1 medium onion, sliced in rings 1/2 cup of chopped fresh parsley 1 tablespoon of extra virgin olive oil 2 cloves garlic, minced 1/2 teaspoon of dried thyme ground pepper to taste
Spread tomatoes in an 8 inch baking dish. Combine remaining ingredients, stirring well and spoon over tomatoes. Cover loosely with foil and bake at 425ºF. for 6 to 8 minutes. Serves 4
