New England Baked Beans 

 

New England Baked Beans
 
 1 pound of dried great northern or navy beans
 1 pound of salt pork, cut up
 1 large onion, chopped, 1 cup
 1 cup of molasses
 1 cup of brown sugar, packed
 1 teaspoon of dry mustard
 1 teaspoon of salt
 1 teaspoon of freshly-ground black pepper 



Instructions:

Rinse beans. In a saucepan bring beans, 8 cups water, and 1/2 teaspoon salt to boiling; reduce heat. Simmer, covered, 1 1/2 hours. Pour beans and liquid into a bowl; cover. Chill overnight.
 
Drain beans, reserving 1 cup liquid; place in crock pot. Add the 1 cup reserved liquid and stir in the remaining ingredients. Cover, cook on LOW for 12 to 14 hours. Stir before serving.
