| | Chuckwagon Pinto Beans
one 32 ounce package dried pinto beans, soaked and drained 1/2 pound of salt pork, cut into 1 inch cubes 1 tablespoon of salt 1/2 teaspoon of pepper 1/2 red pepper pod
Place prepared pinto beans in large Dutch oven. Add salt pork cubes, salt, pepper, and red pepper pod. Add water to cover 3 inches above begins. Cover and bring water to a boil; reduce heat, and simmer for 3 hours or until beans are tender. Yield: 12 servings. |
