Virginia Style Green Beans
3 pounds of fresh green beans 1/4 pound of smoked bacon 3 quarts of water 1/2 teaspoon of freshly ground pepper 1/4 pound of smoked bacon, cooked and crumbled
Wash the beans, trim ends, and remove strings. Cut into 2 inch pieces, set aside. Combine 1/4 pound of bacon and water in a large Dutch oven. Bring to a boil, cover, reduce heat and simmer for 1 hour. Add beans and return to a boil, cover , reduce heat and simmer 25 minutes. Drain beans, discarding bacon. Stir in pepper. Place beans in serving dish, and sprinkle with crumbled bacon. 12 servings
