1 can of diced or sliced beets, drained 2 tablespoons of butter 3 tablespoons of lemon juice 1 teaspoon of grated lemon rind 1/2 cup of honey 1/2 teaspoon of salt 1/2 teaspoon of pepper
Season the beets with salt and pepper, lemon rind, and lemon juice. Place in casserole; cover with honey and dots of butter. Bake covered for about 15-20 minutes at 350ºF. or until glaze is just slightly brown. The same recipe may be followed using orange juice instead of lemon juice and carrots instead of beets. The carrots should be pre-cooked.
