| Honey Glazed Beets
1 can of diced or sliced beets, drained 2 tablespoons of butter 3 tablespoons of lemon juice 1 teaspoon of grated lemon rind 1/2 cup of honey 1/2 teaspoon of salt 1/2 teaspoon of pepper |

Season the beets with salt and pepper, lemon rind, and lemon juice. Place in casserole; cover with honey and dots of butter. Bake covered for about 15-20 minutes at 350ºF. or until glaze is just slightly brown. The same recipe may be followed using orange juice instead of lemon juice and carrots instead of beets.
