1 quart of sliced cooked beets 1/4 cup of pickling spices 1/4 cup of cider vinegar
Drain beet juice into a small saucepan. Add pickling spices and cider vinegar. Heat this till it boils. Lower heat and simmer for about 4 - 5 minutes. Place beets in a small bowl. Strain liquid over beets and chill.
