| Broccoli with Orange Sauce
1 1/2 pound of broccoli, cut into serving sized spears Two 3 ounce packages of cream cheese 1/4 cup of milk 1/2 teaspoon of salt 1/2 teaspoon of grated orange peel 1/4 teaspoon of thyme leaves 1/4 cup of orange juice 2-3 tablespoons of chopped walnuts, if desired |

In large saucepan, cook broccoli in boiling salted water until crisp-tender, 10- 12 minutes; drain well. Place broccoli in serving dish; keep warm. In small saucepan combine cream cheese, milk, salt, orange peel, and thyme. Cook over medium heat until smooth, stirring occasionally. Add orange juice; blend well. Pour orange sauce over broccoli; sprinkle with walnuts. Garnish with orange slices, if desired. Broccoli with Orange Sauce
1 pound of fresh broccoli cut into spears 2 tablespoons of butter 1 tablespoon of cornstarch 1 cup of fresh orange juice divided 1 tablespoon of minced parsley 1 teaspoon of freshly grated orange peel 1/2 teaspoon of dried thyme 1/2 teaspoon of dry mustard 1/8 teaspoon of lemon pepper Unsalted chopped cashews, optional
Steam broccoli until just tender and place in warmed serving dish. In small saucepan melt butter over moderate heat. Blend in cornstarch and 1/2 cup orange juice, stirring until smooth. Mix in remaining 1/2 cup orange juice, parsley, orange peel, thyme, mustard and lemon pepper. Cook over moderate heat, stirring frequently, until mixture thickens. Pour over broccoli and sprinkle with nuts, if desired. |
